I love vegetarian food and could quite happily go veggie (well maybe not give up the bacon butties!) However, my family are a group of meat lovers and we pretty much have meat every day.
With the cost of living crisis effecting lots of UK families, this year I’ve set out to include more veggie dishes in our regular meal plans, and in early March, we all went veggie for a whole week to try out some new recipes (inspired by my 9 year old daughter).
Just typical that this also coincided with the supermarkets struggling to keep fresh produce on the shelves, so I had to get a bit creative with some of the recipes. Anyway, here are some of my favourites I came across:
Roasted vegetable and lentil lasagne – Get that protein in!
Sweet potato, chickpea and spinach curry – Sweet potato, great for the skin! I kept the chilli flakes out for the kids.
Red lentil dahl – Quite a few spices, but if you have a well stocked larder like me, you should have most of these basics.
Rainbow rice – I thought I’d made this one up myself, but I’ve just googled a recipe and it really does exist! For mine I just start by stir-frying onions and garlic, then add in a load of my favourite veggies, add soya sauce and then fold cooked rice into the veggies at the end, to absorb the juices. I also mix in a bit of scrambled egg to mine.
Broccoli and potato soup – I tend to just wing-it when it comes to making soup! There’s plenty of recipes out there for all varieties of vegetable soups, so have a play around with your favourite veggies and you can’t go far wrong!
